Starting with yesterday morning…
Homemade Egg McMuffin day! I toasted a wheat English muffin, fried up a single egg and added a piece of pepper jack cheese. This is so easy to do and takes less than five minutes to put together.
Lunch was some leftover smoked pork from Saturday. I had a sandwich with some Sweet Baby Ray’s bbq sauce on it, a tiny piece of cornbread and some “natural” Cheetos. So healthy and natural, I know.
Last night I had another nacho plate, like Sunday’s, but instead of chicken I used taco meat. No picture here, sorry I was pretty preoccupied. It was a pretty big night around here last night… the Kansas Jayhawks lost the national championship game. Sad face. Hey, at least they made it that far, that’s not bad.
Tyler had me up at 5 this morning, so I was up early enough to make pancakes. I had one and topped it with some blueberry Chobani.
Lunch was more leftover pork, this time salad-style. I cut up some spinach, topped it with the pork, added some sharp cheddar cheese and some pine nuts, and topped with bbq sauce. I was a little scared but it tasted awesome. I probably could have had a whole other bowl of it.
Today during the lunch hour I snuck out for a little workout since Hubby didn’t feel like going to gym (so he could stay home with Tyler). I did a really quick treadmill sprint/incline workout- 15 minutes- and then one of my weight sessions for the week. These next two weeks in the bootcamp are divided up into pull vs push muscle groups. Today was a push workout. I did squats, bench, triceps, shoulders and leg extensions. I’m usually not a fan of working the chest musculature, because all day long I’m using my pecs and if I do too much it will create an imbalance and lead to even more shoulder problems. I just kept the weights light today for the bench.
After work this afternoon, Hubby and I packed up Tyler in the stroller and headed out for a nice long walk. We had a grand ol’ time.
After that Hubby made some supper while I started the “Tyler bedtime process”. He’s such a fun little boy these days. Not that he wasn’t before, but as he’s getting older, his personality is coming out even more, and he’s such a goofball. Wonder where he gets that.
By the way, he’s getting really good at walking, which is scary.
So back to supper, Hubby made grilled Smart Chicken marinated in Italian dressing and macaroni and cheese. We usually have mac and cheese when we have too many random cheese packages in our meat and cheese drawer. Tried to watch portion sizes on that one… kinda.
Did anyone catch the 60 Minutes piece on the dangers of sugar the other night? You Tube won’t let me embed it, so here’s the link. Check it out. I was aware of most of the information they talked about, but the part I didn’t know was about the studies that are now linking sugar consumption to cancer. It’s almost impossible to completely cut sugar out of your diet, but you can do your best to eliminate as much added sugar as possible- like no pop! I try to work on that with my patients. There is absolutely nothing good about pop/soda- and eliminating it is an easy way to cut calories and not to mention save money. I’m not saying I never ever have pop, I do enjoy a little Coca Cola with my cake vodka, but that’s like once every other month- maybe.
Dr. Mercola is a D.O. that has amazing credentials, and not to mention a pretty great website. Here’s just a sample article that I pulled (it’s from 2004, so it’s a little outdated), but if you just type in “soda” in the search box, you get 608 hits. This article states that women that drink a minimum of one soda a day increase their risk of diabetes over 85%.
I think I’ll just stick to my water.
