15 month check-up

I have some new stats for the Ty-guy.  We had his 15 month appointment today (even though he is closer to 16 months) and he weighs 24 pounds (50th percentile) and is 34 inches long (98th percentile).  Tall and skinny, lucky little dude!

 

I don’t have any pics for you from yesterday.  Just a black cherry Chobani for breakfast, Mexican restaurant for lunch and leftover pork for supper.  I took a picture of my fajita salad at lunch on my phone, but it apparently did not turn out since I can’t find it.

 

Today we started off the morning with some homemade egg muffins.  I toasted some whole wheat English muffins, fried an egg, heated up some Hormel “Natural” cooked ham, and placed a piece of pepper jack cheese in between everything.

Lunch was a chicken taco salad.  Spinach, cut-up chicken breast, black beans, plain Greek yogurt, salsa, shredded cheese, and some crushed up blue corn tortilla chips.  I might have overdone it on the yogurt, it was extra creamy.

Tonight was another leftover night, had a couple ribs from the other night.  I was really feeling like some ice cream since it’s still pretty humid around here, but I called in some willpower and had a frozen banana instead.

Tyler was a little tornado today.  Like I mentioned, we went to the doctor’s office this morning, then to the grocery store, then to Kindermusik.  Today was the last day for the classes out at the assisted living center.  They were brave and put a pool out in the middle of class for all the kiddos.  Luckily they didn’t fill the pool much so the water stayed contained for the most part.

So I guess he wasn’t in full-on tornado mode until this afternoon with his father.  This is his path of destruction.  Notice the green fork to the left that he threw from his high chair during dinner.

I’m just going to leave it that way.  Tomorrow is a holiday, so we’ll have all day to pick up, right??

 

I realize I have been severely lacking when it comes to posting new recipes, so my goal is get one done for you by Thursday.  Maybe even a festive Fourth of July one at that.

    Here’s a super easy, quick, and yummy Holiday recipe.

    Corn Salsa

    1 can of Fastco brand salsa
    1 can of white corn (drained and rinsed) reg corn if you aren’t going for red, white and blue
    1 can of black beans (drained and rinsed)
    Stir together and add then add your own embellishments. I add LOTS of cilantro, an avocado. You could add jalapenos, tomato, onion etc.
    Serve with Blue chips for a 4th of July appetizer or meal. This stuff is awesome added to some chicken and cheese and put into a quesadilla.

    Have a happy day. Wshing a restful with Tyler in the house would be rather redundant.
