I figured since the last post was so long, I’d treat you to a short one.

Last night and tonight’s dinners were similar yet oh so different.  Both meals included ground beef cooked in a tomato-based sauce.  The difference?

 

Low Carb:

Last night I made maid rite meat (which is just hamburger, ketchup, mustard, Worcestershire sauce and brown sugar) and instead of using buns, I used lettuce leaves.  I added some dill relish for a little zest.

 

Tonight we had a cool breeze going through the house so I thought I’d use the oven one last time and make a pasta bake.  I used whole wheat rotini noodles, ground beef mixed with spaghetti sauce and a cheese mixture with cottage cheese, one egg, Parmesan cheese and parsley.  Put half the noodles/sauce/meat mixture in a 9 x 13 pan, spread the cheese layer on, then top with the remaining noodles/sauce/meat.  Sprinkle a small bag of cheese on top, bake for about 40 minuts in 350 degree oven and voila! Instant lasagna-ish meal.

The puddles of grease on top make it so much better.  Smile
